Sticky Ginger Loaf with a Clementine Glaze

Unsure what week of lockdown we are currently in, but I can honestly say there has not been a week where I haven't been baking! Some people may say it's a blessing, and others may say that it is a curse. Although I must say, my family have not been complaining!

After baking FOUR of these for different people, I realised it was a bit of a new favourite and I should definitely share the recipe on my blog. It is such a nice cake to be able to share with others, especially since the weather has taken a turn for the worst. The last few days have been a bit rainy, and the days of sitting out in the sun have temporarily come to an end. This cake is perfect for a rainy day, I imagine it would be lovely with a bit of custard for pudding.

I actually didn't have much choice in making this cake as my sister had been pestering me for weeks on end about it!! Her favourite cake is a sticky ginger loaf and I thought it would be good to make one for her to lift her spirits after working so hard through such a strange time! I am glad I made it now though because I really enjoy it myself. In some ways, I bake people cakes to cheer them up because cake is what cheers me up. Whether it is baking a cake or eating it, it's such a treat - and after a really difficult end to university, I have to admit I have just indulged in so much cake! 

Prep Time: 20 minutes.
Cooking Time: 45 minutes.
Easiness: Easy.

Ingredients: 

  • 125g butter
  • 175g muscovado sugar
  • 150ml treacle 
  • 250ml buttermilk 
  • 2 medium eggs, beaten lightly
  • 250g plain flour
  • 2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 2 tsp cinnamon 
  • 2 tsp freshly grated ground ginger
  • 1 tsp ground cardamom
  • half a teaspoon of freshly grated nutmeg
  • 150g icing sugar
  • zest of one clementine 
  • juice of one lemon 



















Method: 
  1. Melt the butter, sugar and treacle together in a large saucepan, stirring until fully combined then leave to cool. 
  2. Preheat the oven to 170°C and lightly grease two 1lb loaf tins.
  3. Once the mix is cool, beat in the buttermilk and eggs. 
  4. Mix the flour, raising agents and spices into a seperate bowl.
  5. In stages, add the dry ingredients to the treacle mixture, stirring after each addition until evenly mixed. 
  6. The mixture should be thick, pour this mixture into the 2 tins.
  7. Place the tins in the oven and bake for 45 minutes. 
  8. Whilst the cake is baking, you can prepare the icing by grating the clementine zest, squeezing the lemon juice and sifting the icing sugar into a bowl. 
  9. Remove the cakes from the oven and pierce the cakes before pouring the glaze evenly over the sponges and leave in the tin for the sponges to soak up the icing glaze. 
  10. Leave to sit in the tins for a couple of hours and then remove the cakes and enjoy this sticky ginger loaf! 





Like the last post, I would just like to say I hope everyone is doing well and staying safe. I think it is so positive to see there is some progress being made in terms of being able to see our families, at a distance, sometime in the near future! I know a lot of people will be holding on to that glimmer of hope, and I am also looking so forward to being able to see my family (at a safe distance of course!). Also, May is Mental Health Awareness month and I do worry for those struggling at such a hard time like this. It is really important for me to stress that it is okay not to be okay at any time, but especially now when life is not the 'normal' we all know. Baking is a really good stress reliever, along with yoga, reading, and many other things! Make sure to keep doing what makes you happy. Hopefully the sun will return for us all soon, in the meantime, stay safe and stay positive!
