Raspberry and White Chocolate Brownies



Hello again, 

I was not very sure how to start off this post...Do I address the current global crisis? Do I ramble on about how I have just had the last month of my final year of University cut short and had to move home? Do I worriedly write about how I am, along with thousands of other people, now unemployed? 

In short, NO. 

There is enough negativity and distressing news surrounding us all at the moment, the focus of this post is to offer an activity that may help you take your mind off it all. I am not suggesting that this blog post is going to change your life. But, a good slice of cake can go a small way in brightening your day...And what better way to spend your time indoors than making a tasty treat for yourself and whoever you may be lucky enough to be self-isolating with?!

Prep Time: 20 minutes
Cooking Time: 30 minutes
Easiness: Easy

Ingredients:

  • 145g unsalted butter 
  • 115g dark chocolate, broken into pieces
  • 200g granulated sugar 
  • 2 large eggs and 1 egg yolk
  • 65g plain flour
  • 25g cocoa powder
  • 1/4 teaspoon salt
  • 125 frozen (or fresh) raspberries
  • 6 squares of white chocolate, chopped. Alternatively, 30g white chocolate chunks



Method:

  1. Preheat the oven to 175°C and line a baking tray with greaseproof paper - I used 2 small loaf tins.
  2. Place a heatproof bowl over a pan (place a little water in the pan) on a low heat and put the dark chocolate and butter into the bowl. Stir gently until the mixture is melted thoroughly. 
  3. Add the sugar to the hot mixture and whisk quickly until fully combined. 
  4. Allow this mixture to cool until it is barely warm to touch. 
  5. Once cooled, add in the eggs and yolk and whisk for around 60 seconds. 
  6. Using a rubber spatula, mix in the flour, cocoa powder and salt to the chocolate butter mix.
  7. Stir in the white chocolate chunks and raspberries. 
  8. Pour the mixture into the prepared tin and bake for 30 minutes. If you don't like your brownies too squidgy, bake for a little longer. 
  9. Leave to cool in the tin before removing, slicing and eating with a nice cup of tea or coffee.

This is a perfect way to make a delicious treat for everyone to enjoy. This recipe also does not use up too much ingredients! 

Just a little extra message to everyone to stay safe and look after themselves. These times are really difficult, but the thought of meeting up with all my family and friends after and giving them all massive hugs is what is getting me through! Along with baking, there are a number of other activities I could suggest as possible "stress relievers" - yoga, reading a book, colouring in, crossword puzzles or decluttering your personal space are all things I enjoy to do to take my mind off of things.
