Carrot, Apple and Cinnamon

It's been a while since I put my last recipe up so I forced myself to get out of bed yesterday and make these muffins. There is a bit of a background story to this recipe which I'll briefly explain as I don't want to ramble on too much.

When I was younger, my best friends mum used to make these muffins and they were always so tasty. Unfortunately, the recipe is a secret family recipe which I would not get my hands on - or even if I did, be able to post online! So I decided I was going to experiment a bit myself to see if I could recreate this recipe just by taking a guess at what ingredients were involved. If I'm honest, they taste completely different, but they still taste good! And that is all that matters. They are also a guilt free recipe as, although they still contain a bit of sugar, they contain a few of your five a day!!

I will warn you now, if you have a sweet tooth, this recipe is not going to do it for you! However, they are a very handy snack and they are suitable for home freezing


☆- Prep Time: 25-30 minutes.
   Cooking Time: 20-25 minutes.
   Easiness: Easy. 

Ingredients: 


  • 3 carrots (grated finely)
  • 1 apple (grated finely)
  • 225g self-raising flour
  • 175g brown sugar
  • 1 teaspoon of ground cinnamon
  • 150ml sunflower oil
  • 2 medium eggs
  • handful of walnuts (optional)
  • handful of raisins (optional)






Method:

  1. Preheat the oven to 180°
  2. Wash and peel the carrots and apple and then grate them both finely and place them in a bowl. 
  3. Next, measure out the self-raising flour, cinnamon and brown sugar into a mixing bowl.
  4. Add the oil and eggs and mix thoroughly to ensure there are no large lumps in the mixture.
  5. Then pour in the apple and carrot and mix through completely.
  6. I added some raisins and finely chopped walnuts to the mix just because I had them in but they are not necessary if you do not like them/have them in. 
  7. Place 12 cupcake cases into a muffin tray and spoon the batter generously into cake cases.
  8. Put into the middle of the oven and bake for 20-25 minutes.

For anyone who likes a more savoury bake then I really think you will like these muffins. They are perfect with a cup of tea for breakfast!
