a little sweet treat ❤

(Post 3)

Hello again, I was so happy I was able to squeeze another recipe in before my nightmare week ahead which will consist of many hours in the library and last minute cramming. My first test is tomorrow and whilst revising today I decided to allow myself an hour or so to rest my brain and bake myself some comfort food.

For a while now I have been thinking of ways to make my brownies a little more unique! After scanning over lots of recipes I gathered a few ideas and decided to just mix them all up and experiment a bit. I hope it works out for you as well as it did for me!

Just a small heads up, the ingredient measurements I provide made a batch of 14 small brownies in a 9x9" baking tray. If you would like to make more then doubling the recipe should work for you.

☆ -  Prep Time: 30 minutes.
    Cooking Time: 25 minutes.
    Easiness: Medium.

Ingredients:
  • 70g self-raising flour.
  • 2 tablespoons of cocoa powder.
  • A pinch of salt.
  • 100g unsalted butter.
  • 5 squares of milk chocolate.
  • 150g granulated sugar.
  • 2 large eggs (beaten.)
  • zest of one large orange.

Method:
  1. Preheat the oven to 180° and lightly grease a small baking tray and line with greaseproof paper.
  2. Sift together flour, sugar and salt.
  3. Melt together chocolate and butter and leave to cool.
  4. Add already beaten eggs.
  5. Once the chocolate and butter has cooled, pour in with remaining ingredients and orange zest.
  6. Mix until batter is smooth and the orange zest is mixed through fairly.
  7. Pour batter into the baking tray.
  8. Bake for 20-25 minutes.
  9. Leave to cool and then cut.

I gave my brownies a dusting of icing sugar to sweeten them that extra bit, not that it was needed!

Top Tip of the Post: When cracking eggs, if a small part of the shell falls in the batter, use a larger bit of the shell to scoop it out as they stick together and means no extra ingredients are wasted.

Today I enjoyed my brownies whilst they were still warm with a dash of single cream, a cup of tea and the company of my flatmate Harriet. I was surprised that the zest of just one orange could have such an affect on the flavour. Unfortunately, I don't think they constitute as one of your 5 a day though...

I hope you enjoyed reading today's recipe - if you have a sweet tooth these brownies are definitely for you!
